So I’ve been trying to find a good granola bar recipe that I can make that’s healthy and easy. I’ve searched Pinterest and tried a few options and decided to add all my finds together and made my own version of them in order to be semi-healthy and taste delicious (not refined as most granola bars/ingredients)

So here is what I came up with!

  • Ingredients:
  • 4 C quick oats
  • 3 ½ C rice crisps/puffed rice
  • 1 tsp ground cinnamon
  • ¼ tsp salt
  • ½ C raw cane sugar
  • ¾ C honey
  • ½ C peanut butter
  • ¾ C butter/coconut oil
  • 1 tsp vanilla
  • ½ C chocolate chips, from the freezer preferred

 

  1. Directions:
  2. In a large mixing bowl, combine the oats, rice crisps, cinnamon, and salt together.
  3. In a saucepan, combine the raw cane sugar, honey, peanut butter, and butter/oil and mix together till it comes to a boil.
  4. Pour the mixture in with the oats and mix together with a spatula until all ingredients are wet.
  5. Grease a 9×13 pan and pour in the combined mixture and spread it together evenly.
  6. Add the chocolate chips (best if cold so it doesn’t melt) on top and press them into the oats.
  7. Cover with tinfoil and let sit on counter for at least 4 hours or until hardened.
  8. Cut with a knife and it’s good to go! Enjoy!
