So I’ve been trying to find the perfect recipe for granola, but I think I’ve finally perfected it to where I made it for a bridal shower and everyone was telling me they thought it was store bought!! I was so excited! So here’s the recipe and what I did:

P.S. Perfect for morning breakfast or snacking – cereal, yogurt parfait, etc.

Ingredients:

  • 4 C oats
  • 1 C slivered almonds
  • 1 C shredded coconut
  • 1½ tsp cinnamon
  • Pinch of salt
  • ⅓ C coconut oil or butter
  • ⅓ C honey
  • 1½ tsp vanilla
  • 2 egg whites

Directions:

  1. In mixing bowl, combine oats, almonds, coconut, cinnamon, and salt and mix together.
  2. In small saucepan, combine the oil or butter, honey, and vanilla, and bring to a boil and take it off the burner (note: you just want it to be mixed well, once it starts boiling take it off otherwise it’ll start to harden and you don’t want that).
  3. Add the liquid into the dry ingredients and stir well so that all the oats are covered.
  4. Add the egg whites to the mixture to make the granola clumpy and crispy.
  5. Grease a 9×13 pan and spread the granola evenly.
  6. Turn on over to 220°F and put it in for 45 minutes.
  7. Take it out and let it sit for at least 4 hours or until hard.
  8. Use a spatula to break it apart and use for whatever you want! Enjoy
