Believe it or not, this was my first time making lasagna since I was a little kid.. But it turned out to be so delicious!! It’s not the normal type of lasagna you’re probably use to, but its pretty darn good.

So I try to stay away from gluten as much as possible but my husband and kids love it and aren’t use to the “healthier version” of things just yet. So I add little by little to get their taste buds thinking. I used lasagna noodles like usual, but I also added zucchini along with it. And instead of ricotta cheese I used Extra Firm Tofu which you seriously cant tell the difference (unless you’re looking for it), and I used ground turkey instead of ground beef… I try to stay away from red meats so just fyi turkey and chicken is the main meats I use.

For all y’all that might be a little concerned about the tofu, keep in mind that my husband HATES tofu. When he walked in the kitchen and saw me mashing it he started freaking out… I told him to get out and mind his own business. Then when he ate it… didn’t taste a difference! It’s seriously amazing! And healthy so it’s a win-win!


Prep Time: 10 minutes
Cook Time: 45 minutes
Ingredients:
  • 8 lasagna noodles
  • 2 zucchini’s, thinly sliced
  • 1 ¼ C mozzarella cheese
  • 2 C tomato sauce or spaghetti sauce
  • ½ lb ground turkey
  • 1 package extra firm tofu
  • 1 egg
  • Italian seasoning
  • Salt and pepper
Instructions
  1. Pre-heat oven at 425°
  2. Cook lasagna noodles in a big pot as called for on box, and broil the zucchini slices in the over till they’re soft. Don’t over-cook either noodles or zucchini.
  3. In a mixing bowl, crumble tofu(with fork or hands), add egg, and half of the called for cheese. Season with 1 tsp Italian seasoning, and salt and black pepper.
  4. Spray 9×13 pan, and add a little bit of sauce to the bottom. Layer noodles at bottom of the pan in a single layer. Layer ⅓ portion of the meat sauce on the lasagna noodles. Layer zucchini. Then layer tofu mixture. Repeat this layering cycle. Add the rest of cheese on top.
  5. Cook for 40-45 minutes, or until cheese is brown and it looks like sauce is boiling.
  6. Let cool for 5 minutes, then serve and enjoy!
